- 125grams raspberry fresh
- 120grams caster sugar
- 200grams dairy soft butter
- 180grams milkybar
- 2L ice cream vanilla
- 120grams plain flour
- 180grams almond meal
- 4 egg whites
- 320grams dark chocolate 70% cocoa
- 1 pinch sea salt ground (to taste)
- 200grams gourmet mixed fruit

Method
Step 1 of 5
Preheat oven to 150ºC (140ºC fan). Lightly grease 12 holes of two Texas (jumbo) muffin tins.
Step 2 of 5
Combine all ingredients (except white chocolate) in a bowl. Mix well.
Step 3 of 5
Spoon half the mixture into the tins. Push two pieces of white chocolate into the centre of the mixture then divide the remaining mixture between each tin.
Step 4 of 5
Bake for 20-22 mins until cooked on the outside but soft and gooey on the inside.
Step 5 of 5
Serve immediately with vanilla ice cream and fresh raspberries, if using.
