  • 125grams raspberry fresh
  • 120grams caster sugar
  • 200grams dairy soft butter
  • 180grams milkybar
  • 2L ice cream vanilla
  • 120grams plain flour
  • 180grams almond meal
  • 4 egg whites
  • 320grams dark chocolate 70% cocoa
  • 1 pinch sea salt ground (to taste)
  • 200grams gourmet mixed fruit

Method

Step 1 of 5

Preheat oven to 150ºC (140ºC fan). Lightly grease 12 holes of two Texas (jumbo) muffin tins.

Step 2 of 5

Combine all ingredients (except white chocolate) in a bowl. Mix well.

Step 3 of 5

Spoon half the mixture into the tins. Push two pieces of white chocolate into the centre of the mixture then divide the remaining mixture between each tin.

Step 4 of 5

Bake for 20-22 mins until cooked on the outside but soft and gooey on the inside.

Step 5 of 5

Serve immediately with vanilla ice cream and fresh raspberries, if using.
