  • 1/4 bunch basil, leaves picked
  • 1teaspoons dried chilli flakes

Description

Top thin slices of crispy sourdough with creamy ricotta, slivered mango, thinly shaved prosciutto, basil and chilli for a perfect summertime snack.

Method

Step 1 of 3

Process ricotta, feta and garlic until almost smooth.

Step 2 of 3

Brush bread with half of the oil. Heat a chargrill pan over medium-high heat. Add bread and grill, in batches, for 2 minutes each side or until golden-brown.

Step 3 of 3

Spread toast with feta mixture. Top with mango, prosciutto and basil. Sprinkle with chilli. Serve drizzled with remaining oil.
