  • 1 small red onion, very thinly sliced
  • 5milliliter extra virgin olive oil cooking spray
  • 1/4 small pineapple, peeled, core removed, thinly sliced
  • 6 slices sourdough
  • 100grams spring onion & chive cream cheese
  • 6 slices D’Orsogna Jarrah Honey Ham Off The Bone
  • 1/4 bunch continental parsley, leaves picked

Description

Forget pizza. These tasty bruschetta slices put flavourful ham and juicy pineapple in leading roles, right where they belong.

Method

Step 1 of 3

Combine vinegar and sugar in a microwave-safe bowl. Microwave on high for 1 minute or until sugar has dissolved. Add onion and stir to combine. Season. Set aside for 30 minutes to pickle lightly.

Step 2 of 3

Heat a chargrill pan over high heat. Spray both sides of pineapple and sourdough slices with oil. Grill pineapple for 2 minutes each side or until lightly charred and caramelised. Transfer to a plate. Cover to keep warm. Grill sourdough for 2 minutes each aside until toasted.

Step 3 of 3

Drain pickled onion. Place sourdough on a serving board. Spread with cream cheese, then top with ham, pineapple and onion. Sprinkle with parsley. Season with freshly ground black pepper. Serve.
