- 1/4 bunch basil, leaves picked
- 8 slices sourdough, toasted

Description
Rich, perfectly salty and ideal for grilling, haloumi stars alongside juicy Australian tomatoes in this gorgeous salad.
Method
Step 1 of 4
Place onion in a heatproof bowl. Cover with boiling water, then drain well. Add vinegar, oil and sugar. Stir to combine. Set aside.
Step 2 of 4
Slice, halve and quarter tomatoes. Arrange on a serving platter.
Step 3 of 4
Heat a greased barbecue grill over medium-high heat. Cook haloumi for 1 minute each side or until lightly charred.
Step 4 of 4
Arrange haloumi on platter with tomatoes. Sprinkle with basil. Spoon over dressing and season. Serve with sourdough.
