- 1/4 cup seasoned flour
- chips for serving
- 1/2 cup oil
- 2 large skinless chicken breast fillets, cut in half horizontally
- 2 eggs, lightly beaten
- leafy salad mix for serving
- 1 cup grated mozzarella cheese
- 500grams parmigiana sauce with tomato, ham & herbs
- 2 cup panko or fresh breadcrumbs
Method
Step 1 of 3
Coat chicken fillets in flour, shaking off excess. Dip into egg and then breadcrumbs, pressing firmly. Refrigerate until required.
Step 2 of 3
Heat oil in a large non stick frypan and cook chicken for 3-4 minutes on each side or until golden brown and cooked through. Drain on absorbent paper.
Step 3 of 3
Place chicken on a baking paper lined tray and top evenly with Leggo’s Parmigiana Sauce and cheese. Place under a hot grill or in a preheated oven at 200°C for 3-5 minutes or until cheese has melted. Serve with steamed vegetables, garden salad and chips.
