- 185grams can tuna in oil, drained and flaked
- 120grams baby rocket leaves

Method
Step 1 of 4
Preheat oven to 200°C.
Step 2 of 4
Prick potatoes 6-8 times with a skewer. Put onto a baking tray and bake for 45 minutes or until soft. Cool slightly. Halve potatoes, scoop out flesh and roughly mash.
Step 3 of 4
Add tuna, corn, avocado and chives. Stir until well combined. Season with salt and pepper.
Step 4 of 4
Spoon mixture into potato shells. Sprinkle with cheese and bake for 15-20 minutes or until cheese is melted and golden. Serve with salad.
