  • 2 cloves garlic, crushed
  • 1teaspoons sugar
  • 1 onion, chopped
  • 4 jumbo long bread rolls, split
  • 1teaspoons dried basil
  • 1/2 cup parmesan, finely grated
  • 4 crumbed chicken schnitzels
  • 180grams bocconcini, drained, sliced
  • 2 cup tomato passata
  • 1tablespoons olive oil
  • 1 1/2 cup salad leaves

Method

Step 1 of 4

Preheat oven to 200°C. Place schnitzels on a baking paper-lined oven tray and bake for 18 minutes. Remove and change setting to grill.

Step 2 of 4

Meanwhile, heat oil in a frying pan. Add onion and garlic and cook on medium heat, stirring occasionally for 5 minutes or until softened. Stir in passata, basil and sugar. Simmer for 10 minutes or until thickened.

Step 3 of 4

Spread 2 tbs passata sauce over each schnitzel. Top with parmesan (reserving some) and bocconcini. Grill for 3 minutes or until bubbling.

Step 4 of 4

Fill rolls with salad and chicken parmigiana (slice chicken, if necessary). Spoon over a little extra sauce and remaining parmesan.
