  • 1 pinch freshly ground black pepper
  • 50grams white breadcrumbs, fresh
  • 1 egg, yolk only
  • 1/2 red onion
  • 1/2teaspoons dried mustard powder
  • 1/2tablespoons celery salt
  • 1teaspoons Worcestershire sauce
  • 4 burger buns
  • 1 round lettuce
  • 2 tomatoes, thickly sliced (to serve)
  • 1 small red onion
  • 4tablespoons No-cook spicy summer relish
  • 400grams good-quality minced beef
  • 2tablespoons gherkin

Description

Using very lean meat can make the burger dry. A little fat keeps the meatjuicy, basting it from within.

Method

Step 1 of 4

Prepare a barbecue for cooking. In a large bowl, mix together all the burger ingredients until well combined.

Step 2 of 4

With damp hands (to help stop the mixture sticking to your fingers),divide the mixture into 4 balls and roll each between your palms until smooth. Flatten each ball out into a large, fat disk to a thickness of 3cm, and pat the edges in to tidy them up.

Place the burgers on a plate, cover with cling film, and chill for 30 minutes (this will help them to keep their shape during cooking).

Step 4 of 4

Cook over a hot barbecue for 6-8 minutes, turning as needed, until the meat is springy to the touch and the edges charred. While the hamburgers are grilling, grill the buns for 1-2 minutes on the insides only, until lightly charred. Serve the burgers and buns with a selection of accompa, and let everyone assemble their own burgers as theyprefer.
