- 40grams butter
- 1 brown onion, finely chopped
- 600grams cup mushrooms, sliced
- 5milliliter virgin olive oil spray
- 2tablespoons worcestershire sauce
- 300milliliter pure cream
- 2teaspoons dijon mustard
- 4 beef porterhouse steak
- 2tablespoons olive oil
- 2tablespoons tarragon, finely chopped
- 2 cup beans, steamed (to serve)
- 500grams baby microwave potatoes
- 3 cloves garlic, crushed
Method
Step 1 of 3
Preheat oven to 200°C. Line a baking tray with baking paper. Prepare potatoes as per packet instructions. Transfer to tray and cool slightly. Using the palm of your hand, flatten potatoes. Spray well with oil and season. Roast for 25 minutes or until golden and crisp.

Meanwhile, brush steaks on both sides with oil and season. Heat a large frying pan over medium-high heat. Cook steaks for 2 minutes each side or until browned. Transfer to a plate and cover to keep warm.

Melt butter in pan. Cook onion and garlic for 3 minutes or until tender. Add mushrooms and cook for 10 minutes or until liquid has evaporated. Add cream, sauce, mustard and tarragon. Bring to the boil and simmer for 5 minutes or until sauce has thickened. Season. Serve steaks with potatoes, sauce and steamed beans.
