Chargrilled Lamb Cutlets with Pesto

- 3 cloves garlic
- 3 cup basil, leaves removed from the stem
- fresh beans, steamed
- 1/2 cup extra virgin olive oil
- 1/4 cup parmesan, grated
- baby potatoes, steamed
- 1/2 cup pine nuts
- 12 lamb cutlets
- 1teaspoons sea salt (extra salt needed for seasoning)
Method
Step 1 of 3
In a food processor, add garlic,salt, pine nuts, basil and 2 tbs of the oil and process until it makes a thick paste.
Step 2 of 3
Stir in parmesan and the remaining oil to make a thin dressing.
Step 3 of 3
Season cutlets with salt and pepper and barbecue or pan-fry for 2 mins each side (or longer if they are thick) until well browned but still pink in the middle. Serve cutlets with potatoes and beans. Drizzle over some of the pesto dressing.
