- 4 lean lamb loin chops, fat removed
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1 handful fresh rosemary stalks
- 300grams broccoli, florets and stalks chopped fairly small
- 1 lemon, juice only
- 1 pinch chilli flakes
- 80grams mint jelly, to serve
- 2tablespoons sherry vinegar
- 1 pinch sugar
- 1tablespoons dark soy sauce
Method
Step 1 of 3
Preheat the oven to 200°C (Gas 6). First, prepare the marinade. Mix together the vinegar, sugar, and soy sauce, then pour over the lamb. Leave to marinate for 5 minutes, or longer if time permits.

Sit the lamb chops in a roasting tin, season well with salt and black pepper, and throw in the rosemary stalks. Roast in the oven for 20-30 minutes until cooked to your liking.

While the lamb is cooking, put the broccoli in a pan of boiling salted water, and cook for about 10 minutes until just soft. Drain, keeping the broccoli in the pan, then mash very gently with a fork. Squeeze over the lemon juice, and add the chilli, a pinch of salt, and some black pepper. Put a lid on the pan, and give it a shake. Serve immediately with the roasted lamb chops and a dollop of mint jelly on the side.
