  • 450grams frozen shoestring fries
  • 1 small Kensington Pride mango, peeled, finely chopped
  • 1/4 bunch coriander, leaves picked, finely chopped
  • 450grams Woolworths BBQ Angus beef burgers with sea salt & cracked black pepper
  • 2teaspoons extra virgin olive oil
  • 4 brioche buns
  • 1/2 cup aioli
  • 1 little gem lettuce, leaves separated, torn
  • 1 small red onion, thinly sliced into rounds

Description

Homemade burgers with a tropical twist in half an hour. Succulent Angus beef patties, mango salsa, crisp lettuce and aioli in a fluffy brioche bun.

Method

Step 1 of 3

Place a baking tray in oven. Preheat oven to 230°C/210°C fan-forced. Line tray with baking paper and arrange chips on tray. Bake for 10 minutes, turn and bake for a further 5 minutes or until golden and crisp.

Meanwhile, preheat a barbecue grill or chargrill pan over medium heat. Combine mango and coriander in a small bowl. Season with pepper. Brush burger patties with oil and cook for 4 minutes each side or until browned and cooked through, and grill buns, cut-side down, for 1 minute or until lightly toasted.

Spread bun bases with half of the aioli and top with lettuce, burger patties, onion and mango salsa. Sandwich with bun tops. Serve burgers with fries and remaining aioli.
