- 500grams beef mince
- 1 small red onion, peeled and diced
- 2teaspoons pesto
- 1 medium egg yolk
- 3 beetroot, ready cooked
- 1tablespoons olive oil
- 60grams goats cheese, soft
- 2teaspoons lemon juice
- 100grams Greek yoghurt
- 60grams watercress
- 4 wholemeal buns
Description
These beef and beetroot burgers are a great way to get extra veggies into dinner and they taste great too.
Method
Step 1 of 4
Place the beef mince, egg yolk, red onion and Worcestershire sauce in a bowl and mix well. Grate one cooked beetroot in and mix to combine.
Step 2 of 4
Shape the mix into patties. Heat the oil in a large pan on a high heat, add the burgers and fry for 5 minutes on each side.
Step 3 of 4
In a small bowl, mix the Greek yoghurt, soft goats cheese and lemon juice to form a smooth sauce. Slice the remaining beetroot into thin discs.
Step 4 of 4
Serve the burgers on the wholemeal buns topped with a dollop of the goats cheese sauce, sliced beetroot and watercress.
