  • 2 potatoes
  • 1 lime, finely zested and juiced (for salsa)
  • 2-3 clove garlic, crushed (for salsa)
  • 1/4 cup flour (for dusting fish)
  • 1-3teaspoons dill (fresh or dried, add to flour for dusting of fish)
  • 1 fresh red chilli, finely chopped (for salsa)
  • 3tablespoons fresh coriander , finely chopped (for salsa)
  • 3teaspoons extra virgin olive oil (for salsa)
  • 1tablespoons rice wine vinegar
  • 2-4tablespoons extra virgin olive oil (to coat chips)
  • 2 fish fillet
  • 1/4teaspoons salt (season flour to preferred taste)
  • 1/4teaspoons salt (season to personal taste)

Delicious home-cooked fish and chips 10 minute prep time.

Method

Step 1 of 5

Heat oven to 180°C

Step 2 of 5

Chips - while the oven is reaching temperature wash, peel, and cut potatoes into chips, place in an ovenproof dish and coat with olive oil (not too much, they are not cooked in the oil it's just a coating to help crispen chips), place in oven. For extra crunchy chips increase the temperature to 200°C for the last 10 minutes of cooking time. Cook to taste.

Salsa - mix all ingredients marked for salsa and place it in the fridge until serving time. Adjust for personal taste preferences.

Step 4 of 5

Fish fillets - skinned and boneless, cook your preferred type. Mix flour, dill, and salt together then dust (evenly coat) fillets in the mixture. Place in the fridge until ready for cooking, usually in the last 10 minutes of chip cooking time. Coat pan will thin layer of oil to prevent sticking. Fry seasoned fish fillets to preferred cooking level.

Step 5 of 5

Serve, chips and fish fillets then add salsa to the top of the fish fillets.
