Description
Elevate your humble chicken schnitzel to a gloriously cheesy chicken parmigiana. It will soon become a household favourite.
Method
Step 1 of 4
Heat oil in a large frying pan over medium heat. Cook chicken for 3-4 minutes on each side or until golden and just cooked through. Transfer to a greased shallow baking dish.
Step 2 of 4
Preheat grill on medium-high. Spoon 1/2 cup sauce over pan. Place chicken on top. Spoon over remaining sauce. Sprinkle with cheese.
Step 3 of 4
Place chicken under grill. Grill for 5 minutes or until cheese is golden and melted. Season to taste.
Step 4 of 4
Meanwhile, place broccoli and cauliflower in a steamer set over a saucepan of boiling water. Steam for 3 minutes or until just tender. Serve parmigiana with steamed vegetables.
