  • 125grams garlic butter
  • 800grams chicken breast fillets
  • 1/2 punnet chives , finely chopped
  • 1 cup dried breadcrumbs
  • 1/3 cup plain flour
  • 2 free range eggs
  • 1/4 cup vegetable oil, for shallow-frying
  • 300grams green beans, trimmed
  • 475grams Woolworths roasted garlic mash
  • 1 lemon, cut into wedges, to serve

Description

Add this recipe to your favourites, you can't go wrong with our classic garlic and herb filled-chicken kyiv, creamy mashed potato and green beans.

Method

Step 1 of 5

Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Cut butter into 12 thin slices.

Step 2 of 5

Using a sharp knife, cut along 1 side of each chicken fillet to form a large pocket (ensuring not to cut all the way through). Place 3 slices of butter into each pocket. Sprinkle butter with chives, then secure with toothpicks to enclose filling.

Place breadcrumbs and flour on separate plates. Whisk eggs and 1 tbs water in a shallow bowl. Coat 1 chicken fillet in flour, shaking off excess. Dip in egg and coat in breadcrumbs, then coat again in egg and breadcrumbs. Place on a plate. Repeat with remaining chicken, flour, egg and breadcrumbs.

Pour enough oil into a large frying pan to cover base. Heat over medium-high heat. Cook chicken for 1 minute on each side or until golden. Place on tray, then bake for 12 minutes or until cooked through. Remove toothpicks.

Meanwhile, cook beans in a saucepan of boiling water for 2 minutes or until just tender. Drain. Serve chicken with beans, mash and lemon wedges.
