- 1/4 bunch mint, leaves picked (to serve)

Description
This easy butter chicken recipe is on the table in 20 minutes. Loaded with chicken and veg for a warming dinner, this is one the whole family will love.
Method
Step 1 of 4
Place rice and 2 1/4 cups cold water in a medium saucepan. Bring to the boil over high heat. Cover and reduce heat to medium. Cook for 14 minutes. Remove pan from heat and stand, covered, for 5 minutes. Fluff up rice with a fork
Step 2 of 4
Meanwhile, heat oil in a large frying pan over high heat. Cook chicken for 5 minutes, turning, or until golden. Add simmer sauce to pan, reduce heat to low and simmer for 10 minutes or until sauce has thickened slightly and chicken is cooked through.
Step 3 of 4
Pierce vegetable packet with a knife and microwave on high for 90 seconds or until vegetables are tender.
Step 4 of 4
Divide rice, butter chicken and vegetables among bowls. Serve topped with mint.
