  • 1/3 cup thickened cream
  • 700grams Australian RSPCA approved chicken thigh fillet, fat trimmed, cut into 3cm pieces
  • 1/4 bunch coriander, leaves picked
  • 4 roti, warmed (to serve)

Description

You only need 25 minutes to get steaming bowls of this fragrant chicken curry on the table. It's packed with flavour and the crispy roti hits the spot.

Method

Step 1 of 4

Heat oil in a large saucepan over medium heat. Add paste and cook for 1 minute, stirring, or until fragrant.

Step 2 of 4

Add soup and ¼ cup cream, then stir to combine. Bring to a simmer.

Step 3 of 4

Add chicken and reduce heat to low. Simmer, covered, for 15 minutes or until chicken is cooked through.

Step 4 of 4

Divide curry among bowls. Drizzle with remaining cream. Scatter over coriander and serve with roti.
