  • 100grams Woolworths shortcut bacon, finely chopped
  • 1tablespoons extra virgin olive oil
  • 500grams Woolworths COOK lemon & pepper chicken breast steaks
  • 500grams Woolworths frozen Australian sliced beans
  • 475grams Woolworths roasted garlic mash
  • 1/4 bunch continental parsley, sprigs picked (to serve)
  • 1 lemon, quartered (to serve)

Description

Tender chicken and crispy bacon are a delicious pairing. This lemon pepper recipe is full of flavour and will take you only 30 minutes from go to whoa.

Method

Step 1 of 4

Heat a large frying pan over medium heat. Add bacon and cook for 6 minutes, stirring, or until golden. Transfer to a plate and cover loosely to keep warm.

Step 2 of 4

Add oil to pan. Cook chicken, in 2 batches, for 3 minutes on each side or until golden and cooked through. Transfer to a plate and cover loosely to keep warm.

Step 3 of 4

Heat same clean pan over medium-high heat. Add beans and 2 tbs cold water, then cook for 5 minutes, stirring occasionally, or until tender and water has evaporated. Return bacon to pan and toss to combine.

Step 4 of 4

Meanwhile, heat mash according to packet instructions. Divide mash among plates. Top with chicken and bean mixture. Scatter over parsley and serve with lemon wedges.
