  • 120grams Woolworths flaked almonds, toasted
  • 1tablespoons extra virgin olive oil
  • 400grams Woolworths beef sizzle schnitzel
  • 1 1/2 cup Woolworths frozen peas, blanched
  • 400grams tub Woolworths potato salad
  • 1/4 bunch continental parsley, leaves picked (to serve)

Method

Step 1 of 4

Heat a large non-stick frying pan over medium heat. Add almonds and cook, tossing for 2 minutes or until toasted.

Step 2 of 4

Heat oil in a large frying pan over medium-high heat. Cook beef, in batches, for 1 minute each side or until browned and just cooked through. Transfer to a plate. Cover loosely with foil to rest.

Step 3 of 4

Place peas in a heatproof bowl. Cover with boiling water. Stand for 3 minutes or until bright green and tender. Drain. Place potato salad in a bowl. Add peas and stir gently to combine.

Step 4 of 4

Spoon potato salad onto serving plates. Top with beef and sprinkle with almonds and parsley. Serve.
