  • 1/4 cup extra virgin olive oil
  • 1/3 cup balsamic glaze
  • 1tablespoons fennel seeds
  • 1tablespoons smoked paprika
  • 600grams (6) chicken thigh fillets, cut in half
  • 1packets 120g baby spinach leaves
  • 1 lemon, cut into wedges

Description

Juicy spiced chicken is a punch of flavour when paired with roasted tomatoes in this super simple dish.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Place tomatoes on prepared tray. Drizzle with half the oil, then ¼ cup of the balsamic glaze. Bake for 10 minutes or until collapsed slightly. Remove from oven. Season.

Step 2 of 4

Meanwhile, using a mortar and pestle, pound fennel seeds until lightly crushed. Stir in the paprika. Place chicken on a plate. Coat in spice mixture.

Step 3 of 4

Heat remaining oil in a large non-stick frying pan over medium-high heat. Add chicken, cook for 3 minutes each side or until browned and cooked through. Remove from heat. Season.

Step 4 of 4

Place spinach leaves on serving plates. Add chicken and any pan juices. Add tomatoes. Drizzle with remaining balsamic glaze. Serve with lemon wedges.
