Instruction tip
Tip:You could also use leftover peels from washed potatoes. Toss peels from 6 large potatoes with ½ tbs extra virgin olive oil and bake at 220°C/200°C fan-forced on a lined baking tray for 20 minutes, or until golden.
Method
Step 1 of 4
Preheat oven to 250°C/230°C fan-forced and line a large baking tray with baking paper.
Step 2 of 4
Add onion and oil to a frying pan on low heat. Cook, stirring occasionally, for 15 minutes, or until caramelised.
Step 3 of 4
Meanwhile, spread fries into a single layer on prepared tray. Bake for 8 minutes, or until golden.
Step 4 of 4
Transfer fries to a microwave-safe serving bowl and top with cheese. Microwave on high for 40 seconds, or until cheese is melted. Top with sauce, caramelised onion and gherkins to serve.
