- 800milliliter canned coconut milk
- 1/2teaspoons ground cinnamon, save 1/4 tsp to serve
- 2teaspoons vanilla extract
- 1/4 cup caster sugar
- 1/4 cup dark rum
- 1/2 cup raisins
- 1/2 cup brown sugar
- 25grams unsalted butter
- 2tablespoons toasted coconut flakes

Description
Deliciously fragrant with the aromas of coconut and rum, this exciting rice pudding will be very good company on a chilly evening.
Method
Step 1 of 3
Place rice, milk, 2 cups cold water, cinnamon, vanilla and caster sugar in a large saucepan and bring to a boil over high heat. Reduce heat to low and simmer, uncovered, for 15 minutes, stirring, or until rice is tender and liquid has thickened.
Step 2 of 3
Meanwhile, place rum, raisins, brown sugar and butter in a small saucepan and heat over medium heat for 2 minutes or until mixture simmers and sugar has dissolved. Remove pan from heat and stand until required.
Step 3 of 3
Divide rice pudding among bowls. Spoon over raisin mixture and serve scattered with coconut and sprinkled with extra cinnamon.
