  • 2teaspoons extra virgin olive oil
  • 1/3 cup frozen corn kernels
  • 1/2 green capsicum, deseeded, finely chopped
  • 2teaspoons Mexican chilli powder
  • 400grams canned diced tomatoes
  • 210grams Woolworths Mexican style 3 bean mix no added salt
  • 150grams thawed marinara mix
  • 1 sprig coriander, leaves picked (to serve)

Description

Spoil yourself (not your bank balance) with this tasty Mexican-style seafood soup loaded with prawns, mussels, calamari, beans, veg and a hit of chilli.

Use up leftover beans in a cheese and bean jaffle.

Method

Step 1 of 3

Heat oil in a medium saucepan over medium heat. Add corn and capsicum, then cook for 5 minutes, stirring occasionally, or until capsicum has softened. Add chilli powder and cook for 1 minute, stirring, or until fragrant.

Step 2 of 3

Add tomatoes and 1 cup water, then bring to the boil over high heat. Reduce heat to medium and simmer, covered, for 5 minutes or until vegetables are tender. Add beans and marinara, then cook, uncovered, for 2 minutes or until seafood is opaque and is just cooked through.

Step 3 of 3

Serve soup topped with coriander.
