Salsa
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 1 tomato, diced
  • 1/2 red onion, diced
  • 500grams green banana prawns, peeled, deveined, tails intact
  • 2teaspoons ground cumin
  • 1teaspoons ground coriander
  • 1teaspoons dried chilli flakes
  • 2 limes juiced
  • 1tablespoons extra virgin olive oil
  • 2 avocados, thickly sliced
  • 10 mini flour tortillas, warmed

Description

Prawns and avocados are the perfect classic pairing in this fresh and vibrant taco recipe that's ready in 3 steps. Serve with extra salsa on the side.

Method

Step 1 of 3

Combine prawns with spices, lime juice and oil in a large bowl. Season. Cover and place in fridge. Allow to marinate for 30 minutes.

Step 2 of 3

Meanwhile combine salsa ingredients in a medium bowl and set aside.

Step 3 of 3

Preheat a large frying pan over medium heat. Add prawns and cook for 1 minute each side or until cooked through. Divide prawn mixture among tortillas. Top with avocado and a little salsa. Serve.
