- 1tablespoons extra virgin olive oil
- 1 crusty jumbo long bread roll, halved lengthways, thinly sliced
- 2 garlic cloves, crushed
- 3 shortcut bacon, trimmed, roughly chopped
- 2 baby cos lettuce, trimmed, leaves separated
- 20 thawed cooked Australian jumbo tiger prawns, peeled, deveined, tails intact
- 1/4 cup shaved parmesan
- 2/3 cup Caesar dressing
- 1 lemon, cut into cheeks
Description
Give Caesar salad a seafood makeover with cooked Australian tiger prawns. With crispy garlic croutons, this salad can be enjoyed as a side or main.
Method
Step 1 of 2
Heat oil in a large frying pan over high heat. Cook bread, turning, for 5 minutes or until golden. Reduce heat to medium-low and cook for 3 minutes to crisp. Add garlic and toss to coat. Transfer to a plate. Wipe pan clean and place over medium-high heat. Cook bacon, stirring occasionally, for 3 minutes or until golden and crisp. Transfer to paper towel-lined plate to drain.
Step 2 of 2
Arrange lettuce, prawns, bacon and croutons on a platter. Drizzle with dressing and scatter over half the parmesan. Season with pepper and serve with lemon and remaining parmesan.
