- 1 long red chilli
- 2 limes, juiced
- 1tablespoons caster sugar
- 1tablespoons fish sauce
- 200grams Solanato tomatoes, halved
- 1 continental cucumber, halved lengthways, deseeded, thinly sliced
- 1/2 bunch mint, leaves picked
- 600grams cooked tiger prawns, peeled, deveined, tails intact

Description
After an easy salad recipe? Try this Thai-inspired noodle salad with cooked tiger prawns. It's perfect for alfresco lunches or weeknight dinners.
Method
Step 1 of 3
Prepare noodles according to packet instructions. Drain. Set aside until ready to use.
Step 2 of 3
Finely chop half of the chilli and thinly slice the remaining chilli into rounds. Place chopped chilli, lime juice, sugar and fish sauce in a small bowl and stir until sugar dissolves.
Step 3 of 3
Place noodles, tomato, cucumber, mint, prawns and half of the dressing in a large bowl and toss to combine. Divide noodle mixture among serving bowls. Scatter over sliced chilli and drizzle over remaining dressing. Serve.
