Thai Watermelon & Prawn Fried Rice

- 500grams banana prawns (tails intact)
- 1tablespoons fish sauce
- 1 1/2 cup diced watermelon
- 1 cup coriander leaves
- 1 bunch broccolini (sliced)
- 2 limes
- 1/2 cup unsalted roasted peanuts (roughly chopped)
- 2tablespoons peanut oil
- 4 cup brown rice (cooked)
- 1/3 cup Thai chilli jam stir-fry paste
Method
Step 1 of 4
Heat 1 tbs oil in a wok or large frying pan over high heat. Stir-fry prawns for 1-2 minutes or until they just change in colour. Add 1 tbs chilli jam and stir-fry for 2 minutes or until prawns are just cooked through. Transfer to a bowl.
Step 2 of 4
Heat remaining oil in a wok or pan over high heat. Add remaining chilli jam and broccolini, and stir-fry for 1 minute or until broccolini is bright green.
Step 3 of 4
Add rice and stir-fry for 3 minutes or until heated through. Stir in fish sauce and juice of half a lime.
Step 4 of 4
Divide rice among bowls. Top with prawns, watermelon and coriander. Scatter over nuts and serve with remaining lime cut into wedges.
