Wok-Fried Broccolini With Tassal Salmon

Ponzu Ginger Sauce
- 1tablespoons mirin
- 1tablespoons rice vinegar
- 2tablespoons soy sauce
- 2tablespoons yuzu juice
- 1tablespoons fresh ginger, grated
- 2 bunches broccolini
- 2 300g tassal salmon, skin on
- 2tablespoons vegetable oil
- 1tablespoons black sesame seeds , toasted
- 1 red chilli, sliced (to garnish)
- 1 green onions, sliced (to garnish)
Method
Step 1 of 4
Heat a large fry pan over medium-high heat. Using 1 tablespoon of vegetable oil, rub over both sides of the salmon. Season with salt and pepper. Cook, skin-side down, for 3 minutes or until the skin is crisp. Turn & cook for a further 2-3 minutes or until cooked through. Transfer to a plate, skin-side up & cover loosely with foil. Set aside for 5 minutes to rest.

Meanwhile, heat a wok over high heat until hot. Add the remaining oil & Broccolini & stir-fry for 2 minutes until almost tender. Remove to a plate.
Step 3 of 4
Add all the ponzu ginger sauce ingredients to the hot wok & bring to the boil. Simmer for 2 minutes until reduced slightly. Return the Broccolini to the wok and stir-fry for 2 minutes until well coated.
Step 4 of 4
Pile the Broccolini & sauce onto serving plates and top with salmon. Sprinkle with sesame seeds, chilli & shallots
