Teriyaki & Ginger Salmon

- 2teaspoons sesame oil
- 1teaspoons teriyaki sauce
- 1 bunch baby bok choy
- 1 long red chilli, deseeded, finely chopped
- 150grams snow peas, trimmed, thinly sliced
- 1 bunch broccolini, trimmed, quarterd
- 2 cup jasmine rice, steamed (to serve)
- 1tablespoons vegetable oil
- 2 garlic cloves, crushed
- 4 salmon pieces
Method
Step 1 of 4
Cook salmon parcels following packet directions.

Meanwhile, heat a wok over high heat until hot.
Step 3 of 4
Add vegetable oil and swirl to coat. Add garlic and chilli. Stir fry for 1 minute. Add broccolini and stalk ends of bok choy. Stir fry for 2 minutes. Add snow peas and leafy section of bok choy and toss until well combined. Add 2 tbs water. Cover and cook for 2 minutes or until vegetables are tender. Add sesame oil and toss until combined.
Step 4 of 4
Spoon rice onto serving plates. Transfer cooked fish and sauce onto rice and serve with vegetables.
