- 200grams chestnut mushrooms, large ones halved
- 1tablespoons dark soy sauce
- 2tablespoons mirin
- 1 piece fresh root ginger, of 5 cm, peeled and finely chopped
- 2 cloves garlic, grated or finely chopped
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 4 salmon fillets, each about 150 g
- 2 pak choi, quartered lengthways

Method
Step 1 of 2
Preheat the oven to 200°C. Put the olive oil, soy sauce, mirin, ginger, and garlic in a bowl and mix together well. Season with salt and black pepper.
Step 2 of 2
Put the salmon fillets, pak choi, and mushrooms in a roasting tin, then drizzle over the oil mixture and combine well. Put into the oven to roast for 20-25 minutes, or until the salmon is cooked through. Serve with rice.
