  • 150grams salmon fillets
  • 1 handful fresh dill, finely chopped
  • 1tablespoons olive oil
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 2 handfuls Swiss chard, trimmed
  • 1 lemon, juice only
  • 1 pinch chilli flakes
  • 125grams butter
  • 1 handful fresh curly parsley, finely chopped

Method

Step 1 of 4

First, make the herb butter. Put the butter and herbs in a mixing bowl, and beat well until everything is combined. Spoon the butter onto a piece of greaseproof paper, then roll into a log shape. Twist the edges of the paper, and put the roll in the refrigerator.

Preheat the oven to 200°C. Sit the salmon fillets in a non-stick roasting tin, drizzle with the olive oil, and season with salt and black pepper. Bake in the oven for 15-20 minutes until the salmon is cooked through.

Step 3 of 4

Meanwhile, cook the Swiss chard in a large pan of boiling salted water for 5-8 minutes until it still has a bite to it. Drain well, and transfer to a serving dish. Squeeze over the lemon juice, and add a pinch of chilli flakes.

Step 4 of 4

Place the roasted salmon on top of the Swiss chard, with a slice of the herb butter on each piece, and serve immediately.
