White Fish With Spinach & Pine Nuts

- 150grams white fish fillets, such as haddock, sustainable cod, or pollack
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 2tablespoons olive oil
- 1 onion, finely chopped
- 1 handful plump raisins
- 1 handful pine nuts, toasted
- 1teaspoons capers, rinsed and gently squeezed dry
- 2 large handfuls fresh spinach, rinsed and drained
Method
Step 1 of 2
Season the fish with salt and black pepper. Heat 1 tablespoon of the olive oil in a large non-stick frying pan over a medium heat. Add the fish, and cook gently for 5-6 minutes on one side. Turn over, and cook on the other side until cooked through - this will depend on the thickness of the fish, but be careful not to overcook. Remove from the pan, and set aside to keep warm.

Carefully wipe out the pan with kitchen paper, then add the remaining olive oil. Sauté the onion for about 5 minutes until soft and translucent. Add the raisins, pine nuts, and capers, and cook for a few minutes more, breaking up the capers with the back of a fork. Add the spinach, and cook until just wilted. Taste, and season if needed. Serve the fish on a bed of the wilted spinach mixture.
