- 4 barramundi fillets
- 2tablespoons fish sauce
- 1/4 small green cabbage, finely shredded
- 1-2 red chillies, sliced
- 2tablespoons fresh coriander leaves, chopped
- 1/2 small red onion, finely diced
- 1/2 papaya, peeled, deseeded, diced
- 1/4 cup lime juice
- 1teaspoons ground coriander
- 1teaspoons ground ginger
- 1/4 cup coconut water
- 2/3 cup coconut flour
- 1 egg, lightly whisked
- 1/4 cup coconut oil

Method
Step 1 of 3
To make the salsa, combine coconut water, lime juice, fish sauce and finely chopped chilli together in a bowl. Add shredded cabbage, papaya, sliced onion, and coriander mix well and set aside.
Step 2 of 3
Combine flour, ground coriander and ginger in a shallow bowl. Dip each fish fillet in egg on both sides, then coat in flour mixture, pressing on firmly.
Step 3 of 3
Heat oil in a frying pan over medium heat. Add fillets and cook for 3-4 minutes each side or until golden and crisp. Transfer to plates, top with salsa to serve.
