- 1 brown onion, finely chopped
- 3tablespoons rogan josh curry paste
- 500grams lamb mince
- 450grams Woolworths microwave brown rice
- 120grams baby spinach leaves
- 1 cup light Greek-style yoghurt
- 1 Lebanese cucumber, grated
- 1/4 bunch mint, leaves picked
- 1/4 bunch coriander, sprigs picked
- 1/4 cup lime pickle
- 1/3 cup dry roasted cashews, roughly chopped

Description
Ditch the takeaway with this easy take on the classic Indian rice dish. Lamb mince, brown rice, yoghurt and spices combine to create a biryani you’ll love.
Method
Step 1 of 3
Heat oil in a large, deep frying pan over medium heat. Add onion and cook for 3 minutes, stirring, or until softened. Add paste and cook for 1 minute, stirring, or until fragrant.
Step 2 of 3
Add lamb mince and cook for 5 minutes, breaking up lumps with a spoon, or until browned. Add rice and cook for 2 minutes, stirring, or until rice is coated and warmed through. Stir in spinach and cook for 2 minutes or until slightly wilted.
Step 3 of 3
Combine yoghurt and cucumber in a small bowl. Serve biryani topped with yoghurt mixture, herbs, pickle and cashews.
