  • 150grams unsalted butter
  • 1 bunch continental parsley
  • 800grams chicken breast fillets
  • 1 cos lettuce
  • 1 lemon, cut into wedges
  • 1 cup parmesan, finely grated
  • 1tablespoons olive oil
  • 1 1/2 cup panko breadcrumbs
  • 4 cloves garlic
  • 260grams sweet berry truss tomatoes

Method

Step 1 of 4

Preheat oven to 220°C. Grease and line a roasting pan with baking paper. Place chicken into pan and set aside.

Step 2 of 4

Place butter, parsley, garlic and 1 tsp each salt and pepper in a microwave-safe bowl. Cook on high for 1 minute or until butter melts.

Step 3 of 4

Brush lettuce with some of the butter mixture, then combine breadcrumbs, parmesan and remaining butter mixture in a bowl. Press crumb mixture onto chicken and bake for 10 minutes.

Step 4 of 4

Add lettuce and tomatoes to pan with chicken and drizzle over oil. Cook for a further 5 minutes or until chicken is cooked through and lettuce is brown around the edges. Serve with lemon wedges.
