  • 1 red onion, sliced
  • 300grams mushrooms, thickly sliced
  • 1 1/2tablespoons lemon juice
  • 2teaspoons grain mustard
  • 2 lemon wedges (to serve)
  • 60grams baby spinach
  • 700grams lamb steaks
  • 1/4 cup olive oil (save 1tsp to drizzle)
  • 1tablespoons thyme leaves, chopped
  • 500grams mini microwavable potatoes

Method

Step 1 of 3

Cook potatoes as per packet instructions for 6 minutes or until just tender. Cool for 2 minutes, open bag and halve potatoes.

Step 2 of 3

Heat oil in a deep frying pan over medium heat. Add potatoes and onion and cook for about 5 minutes or until beginning to brown. Add mushrooms, mustard and thyme and cook, stirring occasionally, for a further 10 minutes, or until potatoes and mushrooms are golden. Add lemon juice and spinach and remove from heat. Transfer to a bowl and keep warm.

Step 3 of 3

Season lamb and drizzle with extra oil. Heat frying pan over medium heat, add lamb and cook for 2-3 minutes each side for medium rare. Rest for a few minutes before serving with vegetables and lemon wedges.
