- 2tablespoons extra virgin olive oil
- 1/2 cup couscous
- 4 basa fish fillets (thawed)
- 1teaspoons Moroccan seasoning
- 400grams Annalisa chickpeas (drained)

Description
Liven up the dinner table with this colourful fish and vegetable tray bake. It’s so easy to make and full of flavour.
Method
Step 1 of 4
Preheat oven to 220°C. Place vegetables in a large shallow roasting pan. Drizzle with 1 tbs oil. Toss to coat.
Step 2 of 4
Roast for 10 minutes. Transfer vegetables to a plate. Sprinkle couscous over base of pan. Pour over 1/2 cup boiling water.
Step 3 of 4
Arrange vegetables and fish on top of couscous mixture. Season with salt, pepper and Moroccan spices. Sprinkle with chickpeas.
Step 4 of 4
Bake for a further 10 to 12 minutes or until fish is cooked through and couscous has absorbed the liquid. Season with salt and pepper. Serve.
