Method
Step 1 of 4
Line a large tray with baking paper. Place flour and breadcrumbs in separate bowls. Whisk eggs and 1/4 cup water in a third bowl. Toss squid rings in flour.
Step 2 of 4
Working in batches, transfer floured squid rings into egg mixture, coating well, then transfer to breadcrumbs to coat completely. Place on tray while repeating with remaining squid.
Step 3 of 4
Heat oil in a deep frying pan or wok over medium-high heat. Cook squid, in batches, for 1 minute or until golden and cooked through. Using a slotted spoon, remove squid from oil and transfer to a baking tray lined with paper towels to drain.
Step 4 of 4
Combine mayonnaise and miso paste in a small bowl. Scatter onion over calamari, then serve with miso mayonnaise and lemon cheeks.
