  • 80grams butter
  • 2tablespoons chives, chopped
  • 1 lemon, cut into wedges (to serve)
  • 1tablespoons olive oil
  • 400grams angel hair pasta
  • 100grams fresh green salad

Method

Step 1 of 5

Remove meat from cooked lobster including meat from claws and roughly chop.

Step 2 of 5

Cook pasta in a large saucepan of boiling salted water as per cooking instructions until just tender. Drain.

Step 3 of 5

Heat oil in a non-stick frying pan. Add lobster and cook for 2 minutes or until just heated through.

Step 4 of 5

Put butter into a small saucepan over a medium-low heat and melt. Cook butter for 4-6 minutes or until butter turns a rich golden brown.

Step 5 of 5

Remove from heat and stir through chives. Spoon pasta into 4 serving bowls and top with lobster. Drizzle with sauce and serve.
