- 2 large eggs, only whites
- 1/3 cup maple syrup, room temperature
- 1/3 cup coconut oil, melted
- 1teaspoons ground cinnamon
- 1/4teaspoons ground cardamom
- 1teaspoons sea salt
- 280grams old fashioned rolled oats
- 150grams raw cashews
- 50grams assorted seeds, pumpkin, sunflower, flax or hemp
- 125grams assorted dried fruit
Description
The best part of granola is the crunchy sweet clusters that come together when baking and this crisp homemade cashew granola is a perfect example.
Method
Step 1 of 4
Preheat the oven to 150°C/130°C fan-forced, line a baking tray with a silicone mat or baking paper setting it aside.
Step 2 of 4
Use a hand mixed to whisk the eggs whites in a bowl until thick and frothy. Beat in the maple syrup, coconut oil, cinnamon, cardamom and sea salt for an additional 2 minutes to until smooth and silky.
Step 3 of 4
Fold in the oats, cashews, seeds and dried fruit into the egg white mixture until fully coated. Pour and spread the coated mixture onto the lined baking tray add it to the oven for 35-40 minutes stirring every 5 minutes or so to cook evenly and prevent from burning on the edges.
Step 4 of 4
Let the granola cool for 30-40 minutes before breaking into clusters adding them to an airtight container to keep fresh and crispy.
