- 50grams walnuts, chopped, divided

- 1tablespoons sultanas
- 4tablespoons Greek yoghurt

Description
Turn your favourite treat into a healthy breakfast with carrot cake scented overnight oats.
Method
Step 1 of 3
Place the oats, oat milk, carrot, maple syrup, cinnamon, mixed spice and half a teaspoon of vanilla extract in a bowl and mix well. Cover and place in the fridge overnight.
Step 2 of 3
Whisk the rest of the vanilla extract into the Greek yoghurt in a small bowl.
Step 3 of 3
Stir in half of the walnuts and the sultanas, spoon the oats into bowls or jars and top with vanilla Greek yoghurt and chopped walnuts.
