- 1/4 cup pizza cheese
- 1/4 small brown onion (thinly sliced)
- 1 shallot (thinly sliced)
- 200grams potatoes (thinly sliced)
- 150milliliter milk
- 25grams beef mince
- 1tablespoons extra virgin olive oil
- 2 eggs (lightly beaten)

Method
Step 1 of 7
Boil, steam or microwave potatoes until just tender, drain.
Step 2 of 7
Heat oil in a medium frying pan; cook for 1-2 minutes or until softened but not brown.

Add mince, cook, stirring until brown. Remove from pan; drain on absorbent paper.
Step 4 of 7
Whisk eggs in a large bowl with milk, shallots and cheese. Stir in potato and mince mixture.

Pour mixture into a heated oiled small non-stick frying pan. Cook, covered, over low heat about 5-8 minutes or until tortilla is just set.
Step 6 of 7
Carefully invert tortilla onto a plate, slide back into pan; cook, uncovered, about 3-5 minutes or until cooked through.
Step 7 of 7
Place in a blender; purée to desired consistency for baby’s developmental age. Add a little extra milk if required. Makes 8 baby portions
