- 3 lebanese cucumber, sliced
- 1 onion, finely chopped
- 2tablespoons parsley, chopped
- cherry tomatoes, halved
- 1 medium zucchini, finely grated, squeezed dry
- 2teaspoons black sesame seeds
- 1tablespoons soy sauce
- 5milliliter rice bran oil spray
- 1tablespoons olive oil
- 500grams chicken mince
- 1/2 cup quinoa flakes
- 20 solanato cherry tomatoes, halved
Method
Step 1 of 3
Preheat oven to 180°C. Line a baking tray with baking paper.

Heat oil in a small frying pan. Add onion and cook for 3 minutes until soft. Transfer to a bowl. Add mince, quinoa, zucchini, soy sauce and parsley.
Step 3 of 3
Mix together well with hands. Roll into small balls and place onto tray. Spray with oil and sprinkle over sesame seeds. Bake for 15-20 minutes or until golden and cooked through. Stand each meatball onto a slice of cucumber and top with a cherry tomato half. Secure with a toothpick. Serve.
