  • 250grams cherry tomatoes, quartered (to serve)
  • 2 cup iceberg lettuce, shredded
  • 500grams chicken breast fillet
  • 5milliliter virgin olive oil spray
  • 1teaspoons smoked paprika
  • 1/2 cup finely grated parmesan
  • 750grams potato wedges
  • 2 eggs
  • 1 1/3 cup breadcrumbs

Method

Step 1 of 3

Preheat oven to 200°C. Line two large baking trays with baking paper. Place potato wedges onto one prepared tray and cook following packet instructions.

Meanwhile, cut chicken breast in half lengthways, then cut each half on the diagonal to make finger-sized pieces. Place flour in a bowl. Whisk eggs in a second bowl. Combine breadcrumbs, cheese, chicken salt and paprika in a third bowl. Lightly coat chicken pieces with flour, egg and breadcrumb mixture.

Place onto remaining tray. Spray well with olive oil. Bake for 10 minutes or until golden. Turn, respray and cook for 5 minutes or until cooked through. Serve nuggets with potato wedges, lettuce and tomato.
