- 2 bananas, frozen, chopped
- 2 handful mint, torn
- 125grams blueberries
- 1-2tablespoons honey
- 1 1/2 cups coconut water (make 1 cup into ice cubs, save 0.5 to soak the chia seeds in)
- 1tablespoons white chia seeds

Soak chia seeds in coconut water for 10 minutes. Transfer to a blender with ice cubes, blueberries (reserving some of each for garnish) and banana. Add mint and honey to taste. Blend until smooth and thick, adding a little more coconut water for desired consistency. Pour into glasses. Add reserved ice cubes, blueberries and chia seeds.
