  • 6 mandarins
  • 1 small lemon
  • 3/4 cup orange marmalade
  • 1/4 cup almond kernels
  • 4 1/2 cup milk
  • 1/4 cup honey
  • 4 1/2 cup traditional rolled oats

Description

Combining mandarin, marmalade and almonds, these easy overnight oats can be prepared ahead of time and make for a zesty breakfast.

Method

Step 1 of 3

Place oats, milk and honey in a large airtight container or jar, mixing well to combine. Seal with lid. Refrigerate overnight to soak.

Step 2 of 3

To make bitter marmalade & mandarin topping, place mandarins, marmalade and lemon juice in a saucepan and cook over medium heat for 3 minutes or until slightly thickened.

Step 3 of 3

Spoon 1 1/2 cups oat mixture into a bowl. To serve warm, microwave oat mixture, stirring halfway, on high for 1 minute 15 seconds or until warmed through. Spoon over bitter marmalade and mandarin topping and serve sprinkled with almonds.
