- 1 cup cherries, pitted (to serve)
- 1 mango, thinly sliced (to serve)
- 4 slice thick day-old bread
- 2 eggs

Method
Step 1 of 3
Lightly whisk eggs in a shallow bowl. Add milk or cream, vanilla essence, icing sugar and cinnamon. Whisk well to combine. Completely soak two bread slices in the egg mixture, then lift out and allow the excess to drip off.
Step 2 of 3
Heat half of the butter in a large frying pan over medium heat. Add the slices of soaked bread and cook for 1-2 minutes each side or until golden. Keep warm. Repeat with the remaining two bread slices.
Step 3 of 3
Cut toast diagonally in half, place onto plates, top with fruit and serve with a dollop of yoghurt, if using.
