  • 1 cup Aussie frozen fruit 100% Australian grown mixed berries
  • 3/4 cup milk
  • 2tablespoons white vinegar
  • 1 cup plain flour
  • 1/2teaspoons baking soda
  • 2tablespoons white sugar
  • 3tablespoons melted butter (save 1tbs for the pan)

Method

Step 1 of 6

Mix together the milk and vinegar and set aside.

Step 2 of 6

In a bowl, add all dry ingredients and mix until combined.

Step 3 of 6

Add to the bowl 1 egg, melted butter and milk mixture and whisk until combine. Stir through Mixed Berries and set aside.

Step 4 of 6

Heat a non-stick fry pan over medium heat and add a touch of butter to coat the pan.

Step 5 of 6

Using a measuring cup or ladle, add around 1/3 cup to the hot pan and cook until bubbles start to appear on the surface. Flip and cook for a further 1-2 minutes. Repeat until all the batter has been used.

Step 6 of 6

Serve with a berry coulis, maple syrup or ice-cream. Enjoy
