  • 1/4 cup light milk
  • 1tablespoons sugar
  • 1/2teaspoons bicarb soda
  • 1 cup wholemeal flour
  • 1/2tablespoons baking powder
  • 2 eggs
  • 3/4 cup siggi’s vanilla 4% yoghurt
  • 1/4teaspoons salt

Method

Step 1 of 6

In a large bowl, combine the flour, baking powder, baking soda and salt.

Step 2 of 6

In a separate bowl, whisk together yoghurt, milk, sugar and eggs.

Step 3 of 6

Stir wet ingredients into the dry ingredients, while being careful not to overmix. Let the batter rest for about 10 minutes.

Step 4 of 6

Heat a non-stick pan over medium heat and add a dab of butter. This is a very sticky batter, so to better form the pancakes, use slightly damp fingers to carefully press the top down for a more even pancake.

Step 5 of 6

Cook pancakes over medium heat until one side looks set and golden brown. Flip and cook until pancake seems cooked through. These pancakes rise quite a bit, so make sure they are cooked through.

Step 6 of 6

Top with more yoghurt, berries and a drizzle of honey.
